Meet the Talent
Chef Ciarán Elliott is a globally trained culinary talent currently serving as Executive Chef of 1919 Restaurant at the Condado Vanderbilt Hotel in Puerto Rico. Born in York, England, and raised between England and Dublin, he began his career at the two-Michelin-starred Restaurant Patrick Guilbaud, where he was named Euro-Toques Ireland's Young Chef of the Year. His experience spans some of the world's most acclaimed kitchens, including Arzak, Akelarre, Frantzén, and Thomas Keller's three-Michelin-starred Per Se in New York, where he rose to Sous Chef.
After relocating to Puerto Rico in 2020, Elliott co-founded the acclaimed wine bar Pio Pio, earning recognition for his inventive use of local ingredients. At 1919, his cuisine blends Puerto Rico's rich culinary heritage with refined global techniques, guided by a philosophy rooted in precision, seasonality, and approachable elegance.
