Creativity and imagination are at the heart of great cooking, and for Ramón Carrillo, Executive Chef of the Wyndham Grand Rio Mar Puerto Rico Golf & Beach Resort, these qualities have defined his career. A 47-year-old Puerto Rican, Chef Carrillo is passionate about crafting unique culinary experiences inspired by local flavors and fresh ingredients.
From a young age, Carrillo, affectionately known as "Cobra" by close friends, discovered his love for cooking. His early passion led him to study at the Universal Education Institute in Hato Rey, Puerto Rico, where his culinary journey began. Eager to refine his skills, he furthered his education at the prestigious Culinary Institute of America in Napa Valley, California, and attended specialized courses at the International Cooking School in Valladolid, Spain.
Chef Carrillo specializes in creative cuisine with a Caribbean flair, always emphasizing fresh, local, and organic ingredients. His "Farm-to-Table" philosophy ensures that his menus highlight the best of Puerto Rico's agriculture, promoting sustainability and supporting local farmers. Additionally, he prioritizes gluten-free and vegan options, ensuring an inclusive dining experience for all guests.
His dedication, hard work, and hunger for knowledge propelled him up the ranks, eventually bringing him to the Wyndham Grand Rio Mar Puerto Rico Golf & Beach Resort, where he now celebrates 29 years of culinary excellence.
Through years of perseverance, he climbed the kitchen hierarchy, earning key leadership roles such as Sous Chef and Executive Sous Chef, ultimately becoming the resort's Executive Chef. His approach seamlessly blends traditional techniques with innovative styles, redefining Puerto Rican cuisine while preserving its rich heritage.
For Chef Carrillo, seasonality is key, his favorite dishes are always inspired by the freshest ingredients available, ensuring that each creation is a reflection of the vibrant flavors of Puerto Rico.
